REM Catechin, a major group of polyphenols in green tea, has received much attention because of its diverse health-promoting properties, such as antioxidative, anti-obesity, hypolipidemic, and anticarcinogenic activities [1–6]. These benefits can be effectively acquired when catechin is taken repeatedly and con- tinuously for a given period of time, because of the short duration of catechin in plasma [7–9]. A promising technology to main- tain nutraceutically effective level of catechin in human body for a longer period of time without the inconvenience due to the frequent intake is to entrap catechin molecules within a biopoly- mer vehicle for the sustained-delivery of catechin into digestive tract. However, little progress has been reported on such oral delivery systems for catechin.
